White Chocolate Cranberry Blondies (GF)
I don’t know if blondes have more fun but you will definitely have more fun this holiday season eating these tasty gluten free & grain free blondies so get in the kitchen and start mixing up these tantalizing treats! They are perfect to take to any holiday party or just enjoy eating a few (or 10) each day. They are also super easy to make as you only need a mixing bowl and a fork - no fancy mixer or blender needed here!
For the cranberries, I used my favorite Made in Nature brand. They are sweetened with only apple juice and no added sugar! Win! Win!! They are so plump and moist I could eat the whole bag.

- easy to make requiring only a bowl, fork, and baking dish

White Chocolate Cranberry Blondies
Ingredients
- 1/2 c coconut oil, softened 
- 1/2 c coconut sugar 
- 1/2 c applesauce 
- 1 large egg 
- 3/4 c cassava flour 
- 1/2 tsp sea salt 
- 1/2 c Made in Nature cranberries 
- 1/3 c white chocolate chips 
Directions
- Preheat oven to 350 degrees. 
- Stir together coconut oil and sugar with a fork. 
- Add in remaining ingredients, stirring until well blended. 
- Pour batter into an 8x8 glass baking dish that has been lined with parchment paper. 
- Bake for 20 minutes. Let cool and then cut into 12 large squares. 
- Optional: grate a little orange zest on top
