Cinnamon Raisin Grain Free Granola

I love granola but oats simply do NOT agree with my tummy. There are a few good grain free options out there but they have added sugar and are quite expensive so I took matters into my own hands and developed a tasty recipe that is sure to satisfy that granola craving. I have made this a handful of times in the past few weeks because we can’t get enough of it! I really have perfected this recipe to be a tried and true go to grain free granola recipe! I didn’t add any sugar because my family is used to it but if you aren’t ready to completely forgo the sugar you can of course add in a banana or two to blend in with the egg and cashew butter, or simply drizzle on some honey or maple syrup before baking or even add in some coconut sugar. Cinnamon Raisin Grain Free Granola

INGREDIENTS

  • 1/3 c coconut oil, melted

  • 3 T cashew butter (or tahini butter)

  • 1 large egg

  • 2 tsp vanilla extract

  • 1 cup roughly chopped cashews

  • 1 cup roughly chopped walnuts or pecans

  • 1 cup hemp seed

  • 1/2 cup pumpkin seeds

  • 1/2 cup sunflower seeds

  • 1/3 cup chia seeds

  • 1 cup coconut shreds

  • 1/4 cup flaxmeal

  • 1 T Ceylon cinnamon

  • 1 tsp pumpkin seasoning

  • 1 tsp sea salt

  • 1/2 cup organic raisins

  • Optional: 1 tsp ashwaganda

  • Optional: 4 scoops of collagen

DIRECTIONS

  1. Preheat oven to 300 degrees.

  2. In a food processor blend together coconut oil, cashew butter, egg, and vanilla extract on low until well mixed about 20-30 seconds.

  3. Place creamed mixture into a large bowl and add in remaining ingredients. Stir until well incorporated.

  4. Spread evenly on a large parchment lined cookie sheet.

  5. Bake for 20 minutes.

I like to serve mine with coconut yogurt, blueberries, and sun-butter or just a simple big bowl of coconut milk.
