Trader Joe’s cauliflower gnocchi is the perfect#meatlessmonday meal especially when served up with peppery arugula, creamy avocado 🥑, liver detoxing beets, and my homemade chimichurri sauce 😋 

If you thought chimichurri was just for topping meat 🥩 you are going to be putting this herby citrus sauce on everything! It could make cardboard 📦taste like a Michelin star ⭐️ entree 🥘 

🍋 5-7 garlic cloves, minced
🍋 1/4 tsp crushed red pepper 🌶 
🍋 3 T EVOO, add more to thin
🍋 3 T Red wine vinegar 
🍋 1 T lime juice
🍋1 cup chopped parsley 
🍋 1 cup chopped cilantro 
🍋 sea salt and cracked pepper to taste 

Use the @mealthy immersion blender to blend into a tasty sauce and pour over everything all week from meat to veggies and even as a salad 🥗 dressing. 

*You can use a food processor or blender if you don’t have an immersion blender.
