Bourbon Eggnog Vanilla Collagen Donuts (GF)

Yeap!! I did it!! Every bite of this donut is a festive taste of the holidays!

Bourbon!!

Eggnog!!

…and then a dash of collagen for gut, joint, hair, skin and nail health!!

These donuts are:

  • gluten free

  • grain free

  • nut free

  • no fancy donut pan needed

  • refined sugar free

Bourbon Eggnog Vanilla Collagen Donuts (GF)

Ingredients

  • 1 packet of active dry yeast

  • 3 T lukewarm water

  • 3/4 c lukewarm eggnog (I used coconut nog)

  • 1 T coconut sugar + 1/4 cup coconut sugar

  • 1/2 c coconut oil, softened

  • 2 eggs, room temp

  • 2 1/2 c of gluten free 1:1 flour ( prefer Bob’s Red Mill GF 1:1)

  • 1 tsp sea salt

  • 1 T cinnamon

  • 1 tsp nutmeg

  • 1 T bourbon

  • 2 T Vital Proteins Vanilla Collagen

  • 1 tsp baking powder

Directions:

  1. In a small dish whisk together yeast, water, eggnog, and one tablespoon of coconut sugar. Sit aside.

  2. In a large mixing bowl cream together remaining coconut sugar and coconut oil. Then add eggs and blend.

  3. Add remaining ingredients and blend.

  4. Fold in yeast mixture with a spatula until donut dough comes together.

  5. Separate the dough into 2 balls and refrigerate for 20-30 minutes. Preheat oven to 375 degrees halfway through waiting for the dough to chill.

  6. Roll out the dough to 1” thickness (one ball at a time) on parchment paper that has been sprinkled with gluten free flour to prevent sticking.

  7. Using a large cup and a small shot glass to cut out the donut shape. Arrange them on a parchment lined baking sheet.

  8. Bake for 8-10 minutes.

Icing

  • Mix together with a fork 1/3 c melted coconut butter, 1 T maple syrup, and 1/2 tsp fresh grates nutmeg. Dip top of the donut in icing or use a butter knife to icing. You can get extra fancy and drizzle a little extra maple syrup on each one.
