Granola is delicious but often loaded with sugar and unhealthy oils. This super crunchy pumpkin, grain free, granola has a major pumpkin spice punch and is loaded with nutrient dense ingredients to fuel you through the day or make the perfect on the go snack. 


🍁 3/4 c pumpkin purΓ©e
🍁 2 T chia seed in 6 oz warm water
🍁 2 tsp Ceylon cinnamon
🍁 3+ tsp pumpkin pie spice
🍁 1 serving vanilla plant based protein powder (I used Amazing Grass brand)
🍁 Sea salt
🍁 2 T local honey  (add more if you like your granola more sweet β€œconventional”) 
🍁 1 c (heaping) of each: shredded unsweetened coconut, organic raisins, and chopped dehydrated apple slices
🍁 1/2 c (heaping) of each: sliced almonds, chopped cashews, chopped walnut or pecans, sunflower seeds, pumpkin seeds, and hemp seeds (You can really use whatever you have on hand just mix it all in!) 

Spread onto 2 (9x13) cookie sheets that have been sprayed with avocado oil. Once the mixture has been spread out evenly, I spray the top of the granola with another spritz of avocado oil. Bake at 300 degrees for an hour or until desired crispness is achieved. I left mine in for almost 2 hours as I like it crunchy. Stir granola at least once every 30 minutes to ensure even roasting.

This granola makes a great gift for teachers, neighbors, hostess, and really any one on your list. It is also great to pack in kid’s lunches, take on road trips, or just keep a stash at your desk for a healthy and satisfying snack.
