Looking for a super simple, healthy, and satisfying snack that is perfect for any social gathering (NYE Party, SuperBowl, Movie Night, etc.) or even to keep on hand in your house for school lunches or anytime you have a snack attack? Then these roasted chickpeas are your ticket to satisfaction! They are salty, crunchy, and loaded with flavor! They are also packed with protein and fiber for the ultimate nutritional snack. Does it get any better? Salty, crunchy, and nutritious!?! Say it isn’t so!

Roasted Chickpeas

INGREDIENTS

  • 2 cans of organic chickpeas, washed and rinsed

  • 3 tsp chili powder

  • 1 tsp garlic powder

  • 1 tsp cumin

  • avocado oil

  • salt & pepper to taste

DIRECTIONS

  1. Preheat oven to 375 degrees.

  2. After rinsing the chickpeas make sure to dry really, really well! This is the trick to getting them extra crunchy and crispy! The more dry the better!!

  3. Toss chickpeas into a mixing bowl and add in enough avocado oil to just lightly coat (1 T max).

  4. Add the remaining ingredients to season. Stir well to evenly coat.

  5. Spread evenly on a large baking sheet allowing enough space for the chickpeas to not touch. If they are crowded they will not crispy up as well.

  6. Bake for 1 hour. Stirring half way through.

  7. Let cool 10 minutes before serving or storing.

  8. Bonus: top with some fresh herbs like thyme and a spritz of lemon or lime.

These tasty morsels are also great on top of a salad in place of croutons.
