No Peanut, Gluten Free Peanut Butter Cookies

Wait what, no peanut - peanut butter cookies? How is that possible and why? Well I cracked the code on making a peanut butter cookie taste like your childhood memory recalls but without using peanuts! With so many people having nut allergies it is exciting to think we can still bring peanut butter tasting cookies to our child’s school, church events, or other social gatherings without worry that someone may have an allergic reaction. The use of tahini butter and Bob’s Red Mill All Purpose gluten free baking flour make these cookies taste like the real deal and are essential to create the peanut flavor.

I know Bob’s Red Mill makes a lot of fabulous flours and it can be overwhelming to ensure you pick up the correct one. Make sure to purchase “Gluten Free All Purpose Baking Flour”. I love using this flour when I can because it is high in fiber which is something most of us are lacking in our daily diet. A 1/4 c has 3 grams of dietary fiber thanks in large to garbanzo and fava beans that are used to create this gluten free flour blend.

Tahini butter is a new favorite of mine for baking. It is made from ground up sesame seeds making it nut free! This is one of the main ingredients used to make hummus so smooth and creamy and is the perfect addition to homemade dressings to drizzle on your veggies or salad.

No Peanut - Peanut Butter Cookies (Gluten Free)

INGREDIENTS:

  • 1/2 c tahini butter

  • 1/2 c grass fed organic butter

  • 1/2 c coconut sugar

  • 1 large egg (organic pasture raised, recommended)

  • 1 tsp vanilla extract

  • 2 c of Bob’s Red Mill All Purpose Baking Flour, Gluten Free

  • 1 tsp baking soda

  • 1 tsp cream of tartar

  • pinch of sea salt plus extra for sprinkling on top

DIRECTIONS:

  1. Preheat oven to 350 degrees.

  2. Mix all of wet ingredients together in a large bowl until well incorporated.

  3. Add remaining dry ingredients.

  4. Use a small cookie scoop to ensure cookies are the same size.

  5. Press cookies down using a fork that has been dipped in sea salt making a criss cross mark.

  6. Arrange on a parchment paper lined baking sheet and bake for 7-8 minutes.

  7. Best served with a glass of your favorite mylk!
