Strawberry Jam, No Sugar Added
Strawberry Jam. I was addicted to an expensive local strawberry jam that I could only buy at our farmers market. Wanting to save money and nix the stress of having to be at the farmers market each week to get my supply of jam, I decided it was time to crack the code on their recipe and of course "health-ify" it to my liking by using organic strawberries and no added sugar.
No Sugar Added Sassy Strawberry Jam
1 - 12 oz. bag of organic frozen strawberries
1 T balsamic vinegar (balsamic glaze also works)
1. Place the frozen strawberries in a small sauce pan.
2. Let berries thaw throughout the day.
3. Once thawed cook slowly over low to medium heat for 7 minutes using a potato masher to break up the strawberries.
4. Remove from heat, stir in vinegar and let cool. Store refrigerated in your favorite mason or jam jar.
** The jam I buy at the farmers market is very runny which I prefer as it incorporates nicely with the teaspoon of cinnamon I have every morning. If you prefer a thicker jam simply drain off all liquid from the strawberries once they thaw and use the balsamic glaze instead of balsamic vinegar. You can also add 1 teaspoon of chia seeds during the cooking process in step 3.
